Elmhirst is an unpasteurised, triple cream, mould ripened cheese similar to the French cheese Vignotte. It has a surprisingly light and silky texture with a white and bloomy rind. It has a delicate flavour when young with a light and moussy texture which develops into a luxuriously rich, creamy and full bodied flavour when mature. Its is available in 300g squares or 800g rounds. This cheese is handmade, so weights are approximate.

CHEESE MAKING

Double cream is added to our Jersey cow milk. The curd is only cut once then hand ladled and left to free drain in the moulds before turning. The cheeses are brined and turned daily for five days and then wrapped at 10 days old. Cheeses are finally sent out to wholesalers when they are 2 - 3 weeks old.

STORAGE

A full size round cheese will have a maximum shelf life of 2 weeks from the date of dispatch and 3/4 weeks for our wholesale customers. The smaller square cheeses have a shorter life as they will ripen faster. The squares will have a maximum of 12 days from the date of dispatch. Please specify if there is a particular day you wish to eat the cheese.
