First made in the early 1990’s at Ticklemore dairy, Rustic production moved to the new Sharpham Dairy in 2003 and has become one of the most popular cheeses in the region. Crumbly texture,

CHEESE MAKING
After hand moulding into basket moulds, the cheese is drained for 48 hours before being dry salted by hand. As the coat of the cheese grows, it is rubbed by hand to form the thin, natural rind and the cheeses are turned weekly.
STORAGE
A full size cheese will have a maximum shelf life of 1 month from the date of dispatch, and 2 months for our wholesale customers. The smaller cheeses have a shorter shelf life as they will ripen faster. The mini or medium cheeses will have a shelf life of 2-3 weeks from the date of dispatch. Please specify if there is a particular date on which you wish to eat the cheese.
